What Eating Beets May Do to Your Body — The Benefits and One Surprising Side Effect

The deep-red color may be startling, but the changes happening inside your body could be even more interesting. Beets contain natural nitrates that the body converts into nitric oxide, a compound that helps blood vessels relax and widen. This process may improve circulation and support healthier blood pressure when beets are eaten regularly as part of a balanced diet. Better blood flow also helps deliver oxygen throughout the body, which may explain why some athletes drink beetroot juice before exercising. Certain studies have linked beet consumption with improved endurance, although results vary by person. The benefits generally appear gradually rather than after a single serving.

Beets may also support the brain because healthy circulation helps oxygen reach areas involved in focus and memory. Their fiber slows digestion, promotes steadier blood-sugar levels, and feeds beneficial bacteria living in the gut. Meanwhile, betalains—the pigments responsible for that rich crimson color—act as antioxidants that help protect cells from oxidative stress. Yet shortly after eating beets, some people notice an unexpected change that can look alarming at first.

Red or pink urine and stool, known as beeturia, may occur in roughly 10% to 14% of people, but it is usually harmless. Beyond this unusual effect, beets supply folate for normal cell development, manganese for bone health, and potassium for proper nerve and heart function. Adding nutrient-rich vegetables to meals can be considered a long-term investment in overall wellness, but no single food serves as insurance against illness or replaces medical care. Beets are also relatively high in oxalates, which may be a concern for people with a history of certain kidney stones. Anyone managing kidney disease, blood-pressure concerns, or another medical condition should discuss major dietary changes with a qualified healthcare professional.

Beets are easy to add to everyday meals without completely changing the grocery budget or weekly routine. They can be roasted with olive oil, shredded raw into salads, blended into smoothies, or served alongside chicken and fish. Because many American adults still struggle to eat enough vegetables, even a few servings each week can add valuable fiber and micronutrients. The greatest benefit comes from consistency and variety rather than treating beets as a miracle cure. Their vivid color may be what first earns them a place on the plate, but their nutritional value is what can keep them there.
